BANGO – KURTOSMESTER- CHIMNEY CAKE
In Hungarian speaking regions spit cake (kurtoskalacs) is knows as a Szekely, Transylvanian and Hungarian pastry as well. It was traditionally made for festivities, weddings, baptizing ceremonies and for the reception of important guests. Respecting its uniqueness the spit cake has been officially registered by the European Union as a Hungarikum (Protected Designation of Origin) at 3, December 2015. Originally, the diameter of the spit cake was exactly the size of the chimney of the spit, hence its name comes from. During preparation the sweet dough is cut in stripes and is wrapped around the spit in spiral threads, rolled in granulated sugar and roasted till it turns golden brown. While roasting the sugar caramelizes and a shiny and crisp layer is formed on the cake. Once ready, the cake is rolled in either cinnamon-sugar or cocoa powder, ground walnuts or hazelnuts or alternately in coconut flakes. We bake it from 2009, we built hundreds of ovens, taught hundreds of people to bake this cake and helped to start a lot of kurtos businesses all around the world.
